For late lunch today I made a green grilled cheese. The recipe was of course off of Pinterest but I did change it a little bit. Part of making this for the first time was making my own pesto! It is delicious and I can't wait to make something else with it. I combined quite a few recipes and then just stopped looking things up and trusted my taste buds. This is by far one of the most delicious things I've ever made. Enjoy!
Ingredients
- Two slices of bread (Thomas picked out a yummy cracked wheat one from our local grocery store's bakery)
- Homemade pesto (recipe below)
- Shredded mozzarella cheese
- 1 avocado
- Crumbled goat cheese
- Olive oil
Directions
- Spread pesto on both slices of bread
- Top one piece if bread with mozzarella cheese, avocado, goat cheese, and more mozerella
- Warm up a little olive oil in a small pan
- Grill the sandwich. About 2 min per side
- Enjoy!!
Kristy's Pesto Recipe
Ingredients:
- 1 tbsp chopped garlic
- 1/4 small yellow onion
- Juice of 1/2 a small lemon
- 1 tbsp chopped parsley
- 2 bunches of basil
- 1/2 cup pine nuts
- 1/3 cup olive oil
- salt to taste
Directions
- Place garlic and onion in food processor until chopped. I used a magic bullet and it worked alright.
- Add lemon and parsley and chop
- Add one bunch of basil at a time
- Add pine nuts and mix
- Add olive oil. At this point the pesto started looking pesto-y. Before that it was just somewhat chopped stuff
- Taste pesto and add salt as desired!
